Food
Safety and Preservation
Each year, millions of
people get sick from food that they eat. Foodborne
illnesses can result in long-term detrimental health
effects. The most severe cases
tend to occur in the very old, the very young, those who
have an illness already that reduces their immune system
function, and in healthy people exposed to a very high
dose of a pathogen. Many of these illnesses can be
prevented by following recommended food handling and
preservation
guidelines.
